Amanda Cash’s food truck, The Magpie, can be seen from a mile away. To Cash, the bright yellow truck is similar to the feeling of Spenard.
“It’s eclectic, bright and colorful,” Cash said.
Cash is the sole owner of The Magpie, but she has several investors. She has lived in Spenard for seven years with her husband and their three children, who are 2, 3 and 9 years old.
“If we’re going to go out to eat, we go to Tommy’s [Burger Stop] or Pho Lena. We don’t really move very far,” Cash said.
The food truck is a family effort, according to Cash. Every moment of free time that her husband has away from working full time and going to school at the University of Alaska Anchorage, he’s working on the 75’ Dodge that hauls the food truck, keeping The Magpie mobile. The truck can be seen all around town, but it’s home or “nest” is located at 3934 Spenard Road.
When Cash started at the Anchorage Farmer’s Market five years ago, she was in a tent and cooking on campfire stoves. At the market, she would make sure to get an item from every vendor. Cash’s favorite item on her menu is the fried egg sandwich, which is made with bread from a bakery in Palmer.
“That’s where it all started…I use the bread from Turkey Red Bakery to this day,” Cash said.
Cash is from southern Indiana and Kentucky. Before making her way to the 49th state, Cash was a fine dining chef.
“I took the farm to table and made southern farm food, southern comfort food,” Cash said.
Cash’s menu includes a variety of comfort foods, like mac and cheese, biscuits and gravy and a purple goat sandwich, which features beets and goat cheese.
